Freezing Skyr is pretty straightforward and can be done similar to freezing cream cheese, for instance.
Depending on whether the package has been opened previously, the process is slightly different.
Here’s how to freeze Skyr:
If the Skyr is unopened, you may store it in the freezer as is. You can keep it like this for at least a few months.
This is actually the best scenario, because there is no potential contamination and the flavor is better preserved.
But if the package has already been opened, you can also freeze your Skyr but probably not for so long. But this also depends on several factors, like temperature, preparation, and so on.
However, here is how you can freeze Skyr that is already open:
- When the package is open, take the desired amount, place it in a zip-lock bag or airtight container.
- Before sealing the bag, make sure there is no air left inside, to avoid freezer burn, which would harm taste and texture even more.
- Note the date and name of the product to keep track of it.
- Put the bag or container in the freezer.
Note: When preparing the Skyr always use sterilized or clean cutlery. Otherwise, the shelf life could be much shorter if bacteria come into contact with Skyr.
How to defrost or thaw Skyr yogurt?
To thaw your delicious Skyr, it’s best to leave it in the fridge overnight.
If you want to thaw it faster, put the bag or container in a bowl of lukewarm water.
I don’t recommend using too much heat, as this might change the texture and taste.

It is easy to tell by its appearance and smell if Skyr has gone bad. In case it looks or smells off, throw it out.
Also, if mold has formed in the container, do not eat it even though you might think that you have fully scraped off the mold. This would be dangerous since there could still be some spores left that are harmful to your health.
