Season with plenty of extra virgin olive oil, sherry vinegar, and salt. Depending on the pasta that we use for the tortellini salad (my favorites for this dish are the ones filled with cheese) we can add other ingredients to our liking, sliced ​​mushrooms, chopped celery, sliced ​​pickles, diced turkey or cooked ham, sweet corn, change the cherry tomatoes for dried tomatoes… You can also replace the basil with a handful of fresh arugula leaves.
